Cream of Asparagus & Garlic Soup

Ingredients
- 4 Cups Chicken Broth
- 2 tbsp Butter
- 1 small Onion
- 2 lbs Fresh asparagus
- 3 cloves Garlic
- 1 tsp Salt
- 1/4 tsp Pepper
- 2 oz Parmesan cheese
- 1/2 cup Heavy whipping cream
Instructions
- Add butter and chopped onion to very large pan and saute until the onions are soft.
- Clean, remove woody part of the stalk, the very bottom of the asparagus and cut into 1 inch pieces. Add to the sauteed onion mixture and cook for about 3-5 minutes on low
- Add broth, over,and cook until the asparagus is soft enough to be able to mash against the pan with a spoon.
- Add in salt and pepper
- Use an Immersion blender to puree the mixture, add the heavy whipping cream and Parmesan cheese and cook over medium heat. DO NOT bring to a boil.
- Serve immediately.
