Cream of Asparagus & Garlic Soup

Ingredients

  • 4 Cups Chicken Broth
  • 2 tbsp Butter
  • 1 small Onion
  • 2 lbs Fresh asparagus
  • 3 cloves Garlic
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 2 oz Parmesan cheese
  • 1/2 cup Heavy whipping cream

Instructions

  • Add butter and chopped onion to very large pan and saute until the onions are soft.
  • Clean, remove woody part of the stalk, the very bottom of the asparagus and cut into 1 inch pieces.  Add to the sauteed onion mixture and cook for about 3-5 minutes on low
  • Add broth, over,and cook until the asparagus is soft enough to be able to mash against the pan with a spoon.  
  • Add in salt and pepper
  • Use an Immersion blender to puree the mixture, add the heavy whipping cream and Parmesan cheese and cook over medium heat.  DO NOT bring to a boil.
  • Serve immediately.
